Duck with White Gourd/ Kumura aru Haanhor Mang




Ingredients:
  • Duck meat- 1.5 kilo
  • White gourd- 300gms (cut into large pieces)
  • Onion- 6 nos. (big size) 
  • Ginger paste- 1tsp
  • Garlic paste- 3tsp
  • Cumin powder- 2 tsp
  • Coriander powder- 1tsp
  • Red chilly powder-1tsp
  • Green chill- 7 nos. (finely chopped)
  • Mustard oil- 200ml
  • Black pepper powder- half tsp
  • Turmeric powder- 2 tsp
  • Salt to taste
  • Bay leaf- 5 nos.


Preparation:
  • Roast the whole duck slightly. Then cut into medium size pieces.
  • Mix meat with half part of onion, 50 ml mustard oil, little salt, 1tsp of turmeric powder and keep them aside for about 30 minutes.
  • Heat oil and fry the white gourd till light brown color appears and keep aside.
  • Add bay leaves, green chilly, onion and fry for 2 minutes.
  • Add ginger-garlic paste, cumin powder, red chilly powder, coriander powder, black pepper powder. Stir fry until all the masala cooked.
  • Add meat, mix well and fry for 5 minutes then add salt and turmeric powder and mix well and fry for another 15-20 minutes.
  • Add fried white gourd and fry for 5 minutes.
  • Add hot water and let it  cook for almost 30 minutes. cook until the gravy is slightly thick.
  • Transfer to a bowl and serve with steamed Joha (Govindo Bhog) rice. Can also serve with chapati, tandoori roti.
