Ingredients:
- Duck meat- 1.5 kilo
- White gourd- 300gms (cut into large pieces)
- Onion- 6 nos. (big size)
- Ginger paste- 1tsp
- Garlic paste- 3tsp
- Cumin powder- 2 tsp
- Coriander powder- 1tsp
- Red chilly powder-1tsp
- Green chill- 7 nos. (finely chopped)
- Mustard oil- 200ml
- Black pepper powder- half tsp
- Turmeric powder- 2 tsp
- Salt to taste
- Bay leaf- 5 nos.
Preparation:
- Roast the whole duck slightly. Then cut into medium size pieces.
- Mix meat with half part of onion, 50 ml mustard oil, little salt, 1tsp of turmeric powder and keep them aside for about 30 minutes.
- Heat oil and fry the white gourd till light brown color appears and keep aside.
- Add bay leaves, green chilly, onion and fry for 2 minutes.
- Add ginger-garlic paste, cumin powder, red chilly powder, coriander powder, black pepper powder. Stir fry until all the masala cooked.
- Add meat, mix well and fry for 5 minutes then add salt and turmeric powder and mix well and fry for another 15-20 minutes.
- Add fried white gourd and fry for 5 minutes.
- Add hot water and let it cook for almost 30 minutes. cook until the gravy is slightly thick.
- Transfer to a bowl and serve with steamed Joha (Govindo Bhog) rice. Can also serve with chapati, tandoori roti.
